Because the morning started off with it being a brisk 48º in our house, (don’t worry, it was a really warm 28º outside) I wanted to share my favorite chili recipe for you to enjoy. Thanks to my WONDERFUL Mother-in-law (I’ve tweaked it some, but it’s about the same) It’s really good, quick, and easy to prepare. You can do it in the crock pot, or over the stove- either way taste the same. You can make with or without beans (one of my sister-in-laws hates beans – so that’s how she would prefer it!) or with. When making without, that’s actually Paleo friendly, which is how we would eat it too – although I used to LOVEEEE my beans.
Ready – Here we GO!
1LB of ground beef (I sometimes use Venison, bison, or anything ground) 1LB ground sausage (you can thank sis in law #2 for that!) small onion – diced 2 cans of diced tomatoes chili powder (to taste) Cracked red pepper (to taste. My husband likes it SPICY!) Garlic- about 1/2 tsp black beans pinto beans Salt & Pepper to taste
In a separate dish, brown beef and sausage with onion and garlic. When finished add to crock pot. Then add all ingredients, mix together, and let cook on low for 6-8 hours, or high for 4 hours. Add Salt and pepper to taste.
Cook sausage and beef with onion and garlic until meat is brown. Drain. Add the rest of the ingredients except the black beans. Let simmer on low for about 30-45 minutes. Add Beans and cook another 30-45 minutes. Serve.
