Pepperoni Pizza Casserole

Want another recipe? I’ve tried some different pizza casseroles in my life, and they have not been good, even in the slightest. UNTIL I tried this one. My husband would prefer me making pizza that was full of gluten, and all the other things that I can’t really tolerate, and I do, occasionally, but when I’m in the mood for pizza, without all the other nastiness, this is the one I would recommend. It’s really tasty, I think at least. Without Further ado, here it is!! Feel free to comment and share your experiences.IMG_5091

Pepperoni Pizza Cauliflower Casserole:

For the Puree:

1 med head cauliflower

2tbs half and half

1tbs butter

8 slices pepperoni

¼ cup shredded mozzarella cheese

salt and pepper


For the Casserole:

12 slices pepperoni

½ cup mozzarella shredded cheese



For Puree –

Clean and trim cauliflower, breaking into medium sized pieces. Place in microwave safe bowl with 2 tbs cream and 1 tbs butter. Microwave uncovered, on high for about 10 minutes. Stir to coat cauliflower with cream/butter mixture. Microwave for about another 6 minutes on high (or until tender.) Remove from microwave and put into blender with 8 slices of pepperoni and ¼ cup shredded cheese. Puree until smooth. Season with salt and pepper to taste. You can adjust cream and butter to your preference for consistency.

For Casserole-

Spread cauliflower puree into an 8X8 over proof casserole dish. Cover with ½ cup shredded cheese and layer with pepperoni. Bake at 375 for about 20 minutes. Serve hot.
